Serve everybody a ray of sunshine with this dramatic sunflower cake.
Preparation Time: 50 minutes plus cooling
Baking Time: 25-30 minutes
Serves 12

For the Cake
3/4 cup cake flour
2 1/2 tablespoons cornstarch
1 1/2 teaspoons baking powder
1/8 teaspoon salt
1/4 cup (1/2 stick) butter, softened
6 tablespoons sugar
1/2 teaspoon vanilla extract
2 eggs, separated
1/4 cup cold milk

For the Frosting
1 cup (2 sticks) butter, softened
12 ounces marshmallow cream
1 teaspoon vanilla extract
yellow food coloring
1 1/2 cups semisweet chocolate chips, melted

medium star pastry tip
small round pastry tip
large platter, at least 10 inches wide

Making the Cake
1. Preheat oven to 350°F. Grease and flour an 8-inch round cake pan. In a large bowl, combine flour, cornstarch, baking powder and salt. In another large bowl, using an electric mixer set on medium speed, beat butter, sugar and vanilla until fluffy, about 3 minutes. Add egg yolks to butter mixture, one at a time, beating well after each addition. Alternately beat in flour mixture and milk, beginning and ending with flour.

2. In another large bowl, with mixer on medium, beat egg whites until stiff peaks form, about 2 minutes. Fold egg whites into batter until smooth.

3. Pour the batter into the prepared pan. Bake until a toothpick inserted in center comes out clean, 25-30 minutes. Transfer the pan to a wire rack; cool for 10 minutes. Invert cake onto rack; cool completely.

Decorating the Cake
1. In a large bowl, using an electric mixer set on low speed, beat butter into marshmallow cream, a little at a time, until smooth, about 3 minutes.

2. Beat in vanilla. Divide frosting between 2 bowls. Add yellow food coloring to 1 bowl; spoon yellow frosting into a pastry bag fitted with a medium star tip. Stir melted chocolate into the other bowl. Spoon 1 cup of chocolate frosting into a pastry bag fitted with a small plain tip; set aside.

3. Transfer the cake to a platter. Frost top and sides of cake with remaining chocolate frosting. Starting at bottom edge of cake, pipe yellow frosting into 1 1/2-inch-long petals onto the platter. Continue piping petals in rows up the sides of the cake.

4. For sunflower seeds, pipe 1/4-inch dots of reserved chocolate frosting in concentric circles on top of cake.
