Yield: Makes 12 pouches

2 16-ounce packages store-bought pizza dough
1 jar store-bought marinara or pizza sauce
¾ cup mozzarella cheese, shredded
¼ cup Parmesan cheese, grated
1 lb. ground turkey (beef, pork or chicken can be substituted or a
¾ cup dried breadcrumbs
½ onion, minced fine
2 cloves garlic, minced fine
1 teaspoon dried basil
1 teaspoon dried oregano
Salt and Pepper to taste
1 egg
2 tablespoons milk

Preheat oven to 375°F. Coat a muffin tin with cooking spray; set aside.

In a large mixing bowl, combine the ground turkey, dried breadcrumbs, minced onion, minced garlic, dried basil and oregano, salt and pepper. Mix well. Form into meatballs about 1 ¼-inches each. Set aside.

Roll out dough to ¼-inch thick. Cut into 12 squares apx. 8-inches square. Line each muffin cup with a piece of the dough, letting excess hang over sides. Fill each with 1 tablespoon sauce, 1 meatball, 1 tablespoon mozzarella, 1 teaspoon Parmesan cheese. Gather each bit of excess dough up around the filling, pinching it together at the top. Whisk the egg and milk together to make a wash and brush onto each pouch.

Bake until golden, 15-20 minutes.

NOTE: Unbaked pizza pouches can be frozen (without the egg wash), popped out of the muffin tin and kept in the freezer for 2 months. To bake, place frozen pizza pouches in a muffin tin, brush with the egg wash and bake for 25-30 minutes.
