People are always surprised to hear that this recipe starts off using baking mix. Though I do make a lot of things from scratch, I love to find a good recipe that has a few shortcuts.
Servings 9
Prep time 15 minutes

Batter Ingredients

1 1/2 cup baking mix, such as Bisquick
1/2 cup sugar
1 egg
3/4 cup sour cream
1 teaspoon vanilla

Topping Ingredients

1 cup pecan halves, coarsely chopped
1/2 cup packed brown sugar
1/2 cup flour
3 tablespoons butter, softened
2 teaspoons vanilla

1. Preheat oven to 350 degrees F.

2. Generously spray and 8 inch square baking pan with non-stick cooking spray.

3. In medium bowl, combine batter ingredients stirring until just combined.

4. Pour batter into prepared pan.

5. In a small bowl, combine pecans, brown sugar and flour. Using your fingers, pinch butter and vanilla into the pecan mixture; creating a crumbly and well blended topping. Sprinkle topping evenly over the batter.

6. Bake for 20 to 25 minutes until edges are golden and a toothpick inserted into the center of the cake comes out clean.
