Ingredients:
• Crisco® Original No-Stick Cooking Spray
• 1 1/2 cups Hungry Jack® Buttermilk Complete Pancake & Waffle Mix (Just Add Water)
• 1 large egg
• 1/4 cup sour cream
• 2/3 cup Smucker's® Sweet Orange Marmalade
• 1 tablespoon butter or margarine
• 2 tablespoons sugar
• 2 to 3 tablespoons Pillsbury BEST® All Purpose Flour

Preparation Directions:
1. HEAT oven to 375°F. Coat 6 muffin cups with no-stick cooking spray.
2. PLACE pancake mix in medium bowl. Beat egg in small bowl. Blend in sour cream and orange marmalade. Add to mix, stirring just until moistened. Divide evenly into prepared muffin cups. Melt butter in small bowl. Using a fork, cut in sugar and flour until evenly moistened and crumbs form. Sprinkle about 1 tablespoon on top of each muffin.
3. BAKE 13 to 15 minutes or until golden brown and toothpick inserted in center comes out clean. Cool 5 minutes. Run a knife around edge of each muffin before removing from pan.
Yield: 6 muffins
Prep Time: 15 min
Cook Time: 15 min

-OR- HERE'S A DIFFERENT RECIPE FOR THIS

2 c. Bisquick mix
1/4 c. sugar
1 egg, slightly beaten
1/2 c. orange juice
2 tbsp. vegetable oil
1/2 c. orange marmalade
1/2 c. chopped pecans

Combine Bisquick and sugar. Stir in egg, orange juice and vegetable oil. Mix until just moistened. Fold in marmalade and pecans. Fill well-greased or paper-lined muffin cups 2/3 full. Add 1 teaspoon of streusel topping. Bake in preheated oven 400 degrees for 18-20 minutes. Makes 1 dozen.

TOPPING:

3 tbsp. sugar
1 tbsp. flour
1/2 tsp. cinnamon
1/4 tsp. nutmeg
1 tbsp. butter

Combine ingredients until mixture is crumbly. You may use apricot or peach preserves in place of orange marmalade and apricot nectar in place of the orange juice.
