Cake that's actually Meatloaf
This April Fools Day, your kids will be thrilled to hear that you're serving a gorgeous layer cake for dinner...
But the joke's on them when they realize it's actually a meatloaf "cake" with mashed potato "frosting"!
Don't miss this great recipe for foolish food fun!
Prep Time: 40 minutes
Baking Time: 20-25 minutes
Serves 8
MEATLOAF INGREDIANTS
2 pounds lean ground beef
3 large eggs
1 cup bread crumbs
2/3 cup sliced green onions
1/2 cup milk
1/2 cup chopped fresh parsley
3 large garlic cloves, minced
2 tablespoons Worcestershire sauce
1 teaspoon salt
1/4 teaspoon black pepper
DECORATION
1 jar (12 ounces) roasted red peppers, drained and patted dry
3 1/2 cups hot mashed potatoes
8 cherry tomatoes, stems removed
DIRECTIONS
Preparing the Meat Loaf
1. Preheat oven to 375F. In a large bowl, combine ground beef, eggs, bread crumbs, green onions, milk, parsley, garlic, Worcestershire sauce, salt and pepper just until blended.
2. Divide mixture between two 8-inch round cake pans, patting to cover pans evenly and make level.
3. Bake meat loaves until juices run clear when meat is pierced with a fork, or meat loaves register 170F on a meat thermometer, 20-25 minutes. Remove pans from the oven; cover loosely with foil and let stand for 10 minutes.
DECORATING THE MEATLOAF
1. Pour off juices from pans. Invert 1 meat loaf onto a flat serving plate. Using a small sharp knife, trim red peppers so that they lie flat. Cover top of meat loaf with a single layer of roasted red peppers.
2. Invert second meat loaf onto red pepper layer. Using a spatula, spread 2 1/2 cups mashed potatoes over top and sides of meat loaf. Spoon remaining potatoes into a pastry bag fitted with a large star tip. Pipe swirls around top edges of cake. Pipe stars around bottom of cake.
3. Place cherry tomatoes, stem-ends down, in a ring around top of meat loaf "cake" to resemble cherries. Cut meat loaf into wedges; serve immediately.
Per serving: 354 Cal.; 26g Protein; 13g Fat; 34g Carb.; 845mg Sodium; 117mg Chol.; 1g Fiber
TIP

In the mood for a burger "deluxe"? Big and little kids alike will love these tasty mini cakes with a yummy cookie in the center and red icing "ketchup"
Hamburger 'Looking' Cakes
Preparation Time: 10 minutes
Baking Time: 20 minutes
Makes 6 cakes
INGREDIANTS
• 1 package (9 ounces) yellow cake mix
• 2 tablespoons light corn syrup
• 2 tablespoons sesame seeds
• 6 large (4-5 inches in diameter) molasses or chocolate crinkle cookies
• 1 tube (4.25 ounces) red decorating icing
• 2 kiwifruit, peeled and sliced
DIRECTIONS
1. Preheat oven to 350F. Coat six 4-inch round ramekins with cooking spray. Prepare cake mix according to package directions. Divide cake batter evenly among prepared ramekins.
2. Bake cakes until golden and centers spring back when touched lightly, about 20 minutes. Remove cakes from ramekins; cool completely on wire racks.
3. Cut each cake bun in half. Brush top of each bun with corn syrup. Sprinkle sesame seeds on top of each.
4. Place cookie patties on bottom halves of buns. Spread red icing ketchup on top of each patty.
5. Cover each with top half of bun. Place on individual serving plates. Arrange sliced kiwifruit pickles next to hamburgers.
Hot Dog 'Looking' Cookies
Preparation Time: 50 minutes plus chilling
Baking Time: 12-14 minutes
Makes 1 1/2 dozen
INGREDIANTS
• 1 cup (2 sticks) butter, softened
• 1 1/2 cups sugar
• 1 1/2 teaspoons baking powder
• 1/2 teaspoon salt
• 1 egg
• 1 teaspoon vanilla extract
• 3 1/2 cups all-purpose flour
• Red and Brown food colorings
• 1 tube (4.25 ounces) yellow decorating icing
• Green colored sugar
DIRECTIONS
1. In a large bowl, using a mixer set on medium-high, beat butter until fluffy. With mixer on medium, beat in sugar, baking powder and salt. Beat in egg and vanilla. With mixer on medium-low, gradually beat in flour. Shape dough into a disk; wrap in plastic and chill for 2 hours.
2. Divide dough into 3 sections. Return 2 sections of dough to refrigerator. Knead red and brown food colorings into remaining dough until a reddish-brown color is reached; rewrap dough and chill 30 minutes.
3. Grease 2 baking sheets. Divide untinted dough into 18 equal pieces. Using your hands, roll each piece into a 3-inch bun. Place buns onto prepared baking sheets. Using a wooden spoon, make a deep indentation in center of each bun.
4. Divide tinted dough into 18 equal pieces. Roll each piece into a 3-inch log; round the ends to resemble hot dogs. Place in center of split dough buns on baking sheets; freeze assembled hot dogs for 30 minutes.
5. Preheat oven to 350F. Bake cookies until set, 12-14 minutes. Transfer cookies to wire racks; cool completely.
6. Using a tube of yellow icing fitted with a round tip, pipe a squiggly line onto each cookie to resemble mustard; sprinkle green sugar on top to resemble relish. _________________ Click Here for your next secret goldbox deal
